Check the Specific Gravity with your CLEAN hydrometer every day. When the SG gets below 1.000 your are ready to “Rack” and Distill.
Racking is a term for siphoning the wash off of the “Dregs”. Dregs are the sediment left in the bottom of the fermenter. These will contain yeast and grains and such. I like to strain the wash through a paint straining bag into a carboy and let it settle out for a couple of days. The Rack again into the boiler and distill.
