When this is all done cover the fermenter with a loose lid or towel and walk away. For a fermentation to work efficiently (read Fast) the temp needs to remain between about 75 and 82F. In cold climates this may be tricky. Believe it or not it does get cold here in Florida. My remedy for this is either a heating pad under the fermenter or I put the vessel in a water bath with an aquarium heater. Both work great. Check it twice a day. You will notice that the top gets almost crusty. This is called a “Cap” and it needs to be gently stirred back in a couple of times/day.
