I do not put really hot liquids in my fermenters I always cool it to below 125F. One trick I use with this and a few other recipes is to put a couple of trays of ice in the pot to cool it off or if you have a Wort chiller you can break that out. I have one but I don’t have to clean melted ice. If you have room in the pot you can also just add up to 2 gallons of cold water. When all of this is done the now “Wash” or “Mash” can be put in the fermenter. Now take your wine hydrometer and put it in your wash. And see where it is floating. You will need to add cool water until the SG is at 1.080 or 1.070. A 5 gallon total volume with 7 lbs of white sugar should be pretty close. Once its there you are ready for the next 2 steps.
