Now after this if the water is still pretty hot (if you chose the steep method) you will add 7 pounds of sugar to the pot and stir until dissolved. Now let it be and go get your fermenter.

The fermenter needs to be disinfected. This is best done by wiping it out with a weak solution of water and good old bleach. Rinse it thoroughly and then rinse it again. Bleach will kill the yeast.
