Spirit Run

Continue to collect all the way to 205F and cut the heat off. Pour out the spent wash from the boiler and Clean the still while it is still warm by back flushing it with water. Now you need to do a second run. Dilute the distillate (now called “Low Wines”) to 40% using your spirit Hydrometer. Pour this back in the still and repeat the above process. This time we are making drinking spirits so you will be making “Cuts”. This run will go much slower. Turn up the heat but when the temp gets to 150F you want to cut the heat way back. As the temp slowly rises toward 172F you will start to get some drops of distillate coming from the condenser. These will begin to run faster as the temp rises.
