Check the gravity of the wash with your wine hydrometer and adjust with cool water to 1.070-1.080sg. Check to make sure the temp is below 100F, Aerate as stated above and pitch your favorite yeast. As stated above check the SG everyday and when it gets to 1.000 or Below Rack and let settle or distill.
